Inspired by nature, tradition and the sea, Michelin starred chef Asimakis Chaniotis-Vallianatos brings his culinary philosophy to Kymata. Drawing from childhood memories, wild ingredients and deep respect for Greek gastronomy, he creates dishes that feel both familiar and exciting. Together with Head Chef Gerasimos Mantalvanos, Kymata offers a refined yet heartfelt interpretation of Greek cuisine, rooted in Kalymnos and open to the world.
