A Journey of Taste and Tradition

Inspired by nature, tradition and the sea, Michelin starred chef Asimakis Chaniotis Vallianatos brings his personal culinary philosophy to Kymata. Shaped by childhood memories, wild ingredients and a genuine love for Greek flavors, he creates dishes that feel comforting, fresh and full of character.
From an early age, Asimakis Chaniotis Vallianatos developed a deep connection with nature. Curious and passionate about exceptional ingredients, he was always eager to discover the best that the land could offer. He spent time searching for wild products, from herbs and greens to fruits and vegetables, such as wild asparagus, purslane and wild leeks.
His interest in food extended beyond the kitchen. He explored traditional ways of sourcing ingredients from the sea and the land, from fishing with longlines and collecting shellfish to spearfishing and even hunting wild birds and hares. These experiences shaped his understanding of ingredients in their purest form.
Whenever he met people with deep knowledge of traditional cuisine, he was eager to listen and learn, absorbing their wisdom and culinary techniques whenever possible.
Today, as a Michelin starred chef and owner of Myrtos by Asimakis in Chelsea, London, he continues to share the flavors and dishes that shaped his childhood, introducing them to an international audience with respect and creativity.
Here at Kymata Restaurant, Asimakis works together with Head Chef Gerasimos Mantalvanos, a culinary professional with many years of experience in gastronomy. Together they offer both the people of Kalymnos and visitors to the island a creative dining experience inspired by Greek cuisine. Their menu highlights carefully selected products from Kalymnos, presenting traditional recipes with a modern touch while always respecting their origins.
